Sweet-and-Sour Pot Roast: A Simple Weeknight Dinner for Busy Families
Well, howdy y’all! Are you looking for an easy, delicious, and comforting meal to feed your family without spending all day in the kitchen? You’ve come to the right place. This Sweet-and-Sour Pot Roast made in the crockpot is a game changer, and I guarantee it’ll be a hit with the whole family. Tender, juicy roast beef paired with the perfect balance of sweet and tangy flavors—what could be better?
Now, the best part about this dish is how hands-off it is. All you have to do is toss everything into the crockpot in the morning, and by dinnertime, you’ll have a mouthwatering meal ready to go. It’s a great way to feed your family without the fuss, and the best part? The beef is from Permaculture Pastures, our family-owned, grass-fed regenerative farm here in Sunset, Texas. You can feel good knowing you’re nourishing your family with healthy, local beef raised the way nature intended.
So, grab your crockpot, a few simple ingredients, and let’s get cookin’!
Ingredients:
• 3-4 lb grass-fed beef chuck roast (from Permaculture Pastures)
• 1 cup apple cider vinegar
• ½ cup ketchup
• ¼ cup brown sugar (or coconut sugar for a healthier option)
• ¼ cup soy sauce (or coconut aminos for a gluten-free option)
• 1 tbsp Worcestershire sauce
• 1 onion, sliced thin
• 2 cloves garlic, minced
• 1 cup beef broth
• Salt and pepper to taste
• Fresh parsley, chopped (optional for garnish)
Instructions:
1. Season and Sear the Roast
Pat your grass-fed chuck roast dry with a paper towel and generously season both sides with salt and pepper. Now, I know it’s tempting to skip the searing step, but trust me—this little extra step is what makes the roast so flavorful! Heat a little oil in a large skillet over medium-high heat, and sear the roast on all sides until it’s nice and browned. About 2-3 minutes per side will do the trick. Once browned, transfer the roast to your crockpot.
2. Make the Sweet-and-Sour Sauce
In a small bowl, mix together the apple cider vinegar, ketchup, brown sugar, soy sauce, and Worcestershire sauce. Give it a good whisk to combine all those flavors into a perfect sweet-and-sour blend. Pour this mixture over the roast in the crockpot.
3. Add the Aromatics
Toss in the sliced onions, minced garlic, and beef broth. Give everything a quick stir to make sure the roast is nicely covered in the sauce and onions are spread out around the meat.
4. Let It Cook
Cover the crockpot and set it to low. Let that pot roast cook away for about 6-8 hours, or until the meat is fork-tender and pulls apart easily. Your house will smell amazing while it simmers away!
5. Serve and Enjoy
Once the roast is done, remove it from the crockpot and shred it using two forks. If you want to thicken up the sauce a bit, just transfer a cup or so of the cooking liquid to a small saucepan and simmer for 10 minutes. Spoon that delicious sauce over the shredded roast, garnish with fresh parsley, and serve with mashed potatoes, rice, or even a side of roasted veggies.
