Ingredients

1 lb grass-fed beef liver (from Permaculture Pastures)

1 tbsp olive oil

1 small onion, chopped

2 cloves garlic, minced

1 tbsp brandy or cognac (optional, but gives a lovely depth of flavor)

½ cup grass-fed butter, softened

2 tbsp heavy cream (or coconut cream for a dairy-free version)

1 tsp dried thyme

1 tsp sea salt

½ tsp black pepper

½ tsp paprika

Fresh parsley, for garnish


Instructions


Step 1: Cook the Liver

1. Rinse the liver slices and pat them dry with a paper towel.

2. Heat a tablespoon of olive oil in a large skillet over medium heat. Add the liver slices and cook for about 2-3 minutes per side, just until browned.

3. Once cooked, remove the liver from the skillet and set it aside to cool slightly.


Step 2: Sauté the Onions and Garlic

1. In the same skillet, add the chopped onion and sauté until softened and golden brown, about 5-7 minutes. Add the garlic and cook for another 30 seconds.

2. Pour in the brandy (if using) and let it cook off for a minute, scraping up any bits from the bottom of the pan.


Step 3: Blend It All Together

1. Once the liver has cooled, cut it into smaller pieces and place it in a food processor.

2. Add the cooked onions and garlic, butter, cream, thyme, salt, pepper, and paprika. Blend until smooth and creamy. You might need to scrape down the sides of the processor a couple of times to get everything evenly mixed.


Step 4: Chill and Serve

1. Spoon the pâté into a small dish or jar and smooth out the top. Chill in the fridge for at least an hour before serving to let the flavors meld together.

2. Garnish with fresh parsley and serve with your favorite crackers, veggies, or even on a slice of toasted sourdough bread.
