Ingredients:

3-4 lb grass-fed beef chuck roast (from Permaculture Pastures)

1 tbsp olive oil

Salt and pepper, to taste

1 onion, chopped

3 carrots, peeled and cut into large chunks

3 celery stalks, cut into large chunks

4 garlic cloves, minced

2 cups beef broth (preferably homemade or low-sodium)

1 cup red wine (optional, but adds a rich depth of flavor)

2 tbsp tomato paste

2 tbsp Worcestershire sauce

1 tsp fresh thyme (or ½ tsp dried)

1 tsp fresh rosemary (or ½ tsp dried)

2 bay leaves

1 tbsp cornstarch (optional, for thickening the gravy)


Instructions:

1. Sear the Roast

To get a beautiful caramelized crust on your roast, we’re going to sear it first. Heat the olive oil in a large Dutch oven or heavy-bottomed skillet over medium-high heat. Season the chuck roast with a generous sprinkle of salt and pepper, and sear the roast on all sides until it’s beautifully browned. This will take about 3-4 minutes per side. Once browned, remove the roast and set it aside.

2. Sauté the Veggies

In the same pot, add the onion, carrots, celery, and garlic. Sauté for about 5 minutes, stirring occasionally, until the veggies start to soften and get a little color on them. This helps bring out all those wonderful flavors.

3. Deglaze the Pot

Pour in the red wine (if you’re using it), and scrape up all those delicious browned bits from the bottom of the pot with a wooden spoon. This is where all the flavor lives, so don’t skip this step! If you’re not using wine, just skip ahead and use beef broth to deglaze.

4. Add the Broth and Seasonings

Now, it’s time to add the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves. Stir everything together and bring it to a simmer.

5. Cook the Roast

Return the seared chuck roast to the pot, making sure it’s nestled in the flavorful liquid. Cover with a lid and place the pot in the oven, preheated to 325°F. Let it cook low and slow for about 3-4 hours, or until the roast is fork-tender and easily shreds. If you’re using a crockpot, cook on low for 7-8 hours.

6. Finish the Gravy

Once the roast is cooked, remove it from the pot and set it aside to rest. If you’d like to thicken the gravy a bit, mix cornstarch with a tablespoon of water to create a slurry, and then whisk it into the sauce. Let it simmer for a few minutes until it thickens up.

7. Serve and Enjoy

Shred the roast into bite-sized pieces, and serve it over mashed potatoes, rice, or roasted vegetables. Spoon that velvety, flavorful gravy over the top, and you’ve got yourself a meal that’ll have the family asking for seconds!
