Ingredients for Loaded Brisket Fries
For the Brisket:
• 2–3 pounds Permaculture Pastures grass-fed brisket
• Salt and pepper, to taste
• 1 tablespoon smoked paprika
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• ½ teaspoon cayenne pepper (optional for a little heat)
For the Fries:
• 4–5 large russet potatoes (or sweet potatoes for a Paleo option)
• 2–3 tablespoons olive oil
• 1 tablespoon Permaculture Pastures Burger Rub
Toppings:
• 1½ cups shredded cheddar or pepper jack cheese (or a dairy-free alternative)
• 1 cup sour cream (or Greek yogurt for a lighter option)
• ½ cup green onions, chopped
• ½ cup pickled jalapeños (optional for spice lovers)
• ½ cup diced tomatoes or salsa
• Fresh cilantro leaves (for garnish)
For the Sauce (Optional but Highly Recommended):
• ½ cup mayo (homemade recipe works great!)
• 1 tablespoon fresh lime juice
• 1 teaspoon Permaculture Pastures Burger Rub
Instructions
1. Prepare the Brisket
1. Preheat your oven to 300°F or set up your smoker at 225°F.
2. Season the brisket generously with salt, pepper, smoked paprika, garlic powder, onion powder, and cayenne (if using).
3. If smoking, place the brisket fat-side up and cook for 8–10 hours until it’s tender and pulls apart easily. If roasting, wrap the brisket in foil, place it in a roasting pan, and cook for 4–5 hours.
4. Let the brisket rest for 20–30 minutes, then shred or chop into bite-sized pieces.
2. Make the Fries
1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
2. Slice the potatoes into thin fries or wedges. Toss them with olive oil and our Permaculture Pastures Burger Rub to coat evenly.
3. Spread the fries out in an even layer on the baking sheet. Bake for 25–30 minutes, flipping halfway through, until crispy and golden brown.
3. Assemble the Loaded Fries
1. Once the fries are done, pile them onto a serving platter or keep them on the baking sheet.
2. Sprinkle the shredded cheese over the hot fries and pop them back in the oven for 2–3 minutes to melt.
3. Add the shredded brisket on top of the cheesy fries, then drizzle with sour cream or sauce.
4. Sprinkle with green onions, pickled jalapeños, diced tomatoes, and fresh cilantro.
4. Make the Sauce
1. In a small bowl, whisk together the mayo, lime juice, and Permaculture Pastures Burger Rub. Drizzle the sauce over the loaded fries for an extra burst of flavor.
