Ingredients
For the Beef Fried Rice:
• 1 lb Permaculture Pastures Grass-Fed Ground Beef
• 2 tablespoons beef tallow or avocado oil
• 1 medium onion, diced
• 3 garlic cloves, minced
• 1 cup diced carrots
• 1 cup frozen peas
• 3 cups cooked and chilled rice (white or brown)
• 2 eggs, beaten
• 3 tablespoons coconut aminos (or low-sodium soy sauce)
• 1 tablespoon sesame oil
• 1 teaspoon ginger, grated (optional but so good!)
• Salt and pepper to taste
• Sliced green onions, for garnish
Optional Add-Ins:
• Diced bell peppers, zucchini, or mushrooms for extra veggies
• A pinch of red pepper flakes for a little heat
Instructions
Step 1: Cook the Beef
Heat a large skillet or wok over medium-high heat and add the beef tallow or avocado oil. Once hot, add the Grass-Fed Ground Beef, breaking it up with a spoon as it browns. Season with a pinch of salt and pepper. Once fully cooked, transfer the beef to a plate and set aside.
Step 2: Sauté the Veggies
In the same skillet, add a little more tallow if needed. Toss in the diced onion, garlic, and carrots. Cook for about 3-4 minutes, until the veggies are softened and fragrant. Add the frozen peas and cook for another 2 minutes.
Step 3: Add the Rice
Push the veggies to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until they’re just set, then mix them in with the veggies.
Next, add the cooked rice to the skillet, stirring everything together. Let the rice cook for a minute or two to get a little crispy on the bottom.
Step 4: Bring It All Together
Return the cooked beef to the skillet and stir to combine. Drizzle with coconut aminos, sesame oil, and grated ginger if using. Stir everything together until it’s well-coated and heated through. Adjust the seasoning with more salt, pepper, or coconut aminos to taste.
Step 5: Garnish and Serve
