Y’all, there’s something downright magical about taking a classic dish and giving it a wholesome, farm-fresh twist. Today, I’m sharing my recipe for Scotch Eggs, made with Permaculture Pastures Grass-Fed Ground Beef. This dish is savory, satisfying, and oh-so-impressive when you bring it to the table. It’s the kind of recipe that makes everyone think you’ve been in the kitchen all day (but it’s surprisingly easy!).

Ingredients


For the Scotch Eggs:

1 lb Permaculture Pastures Grass-Fed Ground Beef

4 large eggs, hard-boiled and peeled

1/2 cup almond flour (or breadcrumbs if not Paleo)

1 egg, beaten

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried parsley

1 teaspoon salt

1/2 teaspoon black pepper

Optional: a pinch of cayenne for a little kick


For Frying:

Beef tallow (or oil of your choice)


For Serving:

Whole-grain mustard or spicy aioli

Fresh greens or a side salad


Instructions


Step 1: Prep Your Hard-Boiled Eggs


Peel your hard-boiled eggs and set them aside. If you want perfectly cooked eggs, boil them for 9 minutes, then plunge them into an ice bath to cool quickly—easy peasy!


Step 2: Make the Beef Mixture


In a bowl, mix the Grass-Fed Ground Beef with almond flour, garlic powder, onion powder, smoked paprika, parsley, salt, pepper, and cayenne if you’re using it. Knead gently until everything is well combined.


Step 3: Wrap the Eggs


Divide the beef mixture into 4 equal portions. Flatten each portion into a disc, then carefully wrap it around a hard-boiled egg, sealing the edges to form an even layer. Make sure the eggs are completely covered!


Step 4: Dredge the Eggs


Roll each beef-wrapped egg in the beaten egg, then coat it in almond flour. This will give your Scotch Eggs a crispy, golden crust.


Step 5: Fry the Eggs


In a cast-iron skillet, heat enough beef tallow to cover the eggs halfway. Once the tallow is hot (about 350°F), carefully place the eggs in the skillet. Fry for 3-4 minutes on each side, until golden brown and cooked through. Transfer to a plate lined with paper towels to drain.


Step 6: Serve and Enjoy


Slice the Scotch Eggs in half for a beautiful presentation. Serve them warm with a dollop of whole-grain mustard or spicy aioli, alongside a fresh green salad.
