Ingredients


For the Spaghetti Squash:

1 large spaghetti squash

2 tablespoons olive oil

Salt and pepper to taste


For the Bolognese or Meatballs:

1 lb Permaculture Pastures ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 (14.5 oz) can crushed tomatoes

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for a little heat)

Salt and pepper to taste

1/4 cup heavy cream (optional, for a creamy finish)


For the Meatballs (optional):

1 lb Permaculture Pastures ground beef

1/4 cup grated Parmesan cheese

1/4 cup breadcrumbs (use gluten-free if preferred)

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste


Instructions


1. Roast the Spaghetti Squash:

1. Preheat your oven to 400°F (200°C).

2. Cut the spaghetti squash in half lengthwise, scoop out the seeds, and drizzle the flesh with olive oil.

3. Season with salt and pepper.

4. Place the squash cut-side down on a baking sheet lined with parchment paper.

5. Roast for 35-40 minutes, or until the squash is tender and the flesh can easily be scraped into strands with a fork.

6. Set aside to cool slightly, then use a fork to shred the squash into spaghetti-like strands.


2. Make the Bolognese Sauce:

1. In a large skillet, heat a little olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.

2. Add the minced garlic and cook for another 30 seconds until fragrant.

3. Add the Permaculture Pastures ground beef and cook until browned, breaking it up with a spoon as it cooks.

4. Stir in the crushed tomatoes, tomato paste, oregano, basil, red pepper flakes (if using), and salt and pepper to taste.

5. Bring to a simmer and cook for 20-25 minutes, stirring occasionally, until the sauce has thickened. If you’d like a creamier sauce, stir in the heavy cream toward the end.


3. Make the Meatballs (Optional):

1. In a mixing bowl, combine the Permaculture Pastures ground beef, Parmesan cheese, breadcrumbs, egg, garlic, oregano, basil, salt, and pepper.

2. Form the mixture into small meatballs, about 1 inch in diameter.

3. In a skillet, heat a little olive oil over medium heat. Brown the meatballs on all sides, about 5 minutes. Once browned, transfer them to the simmering Bolognese sauce to cook through for 10-15 minutes.


4. Assemble the Dish:

1. Once the spaghetti squash is ready, plate a serving of the squash strands.

2. Top with a generous portion of the Bolognese sauce (and meatballs, if you made them!).

3. Garnish with fresh basil or grated Parmesan if desired.
